Kilombo; Costa Riaca Restaurant Brining the Taste of Argentina to San Jose

“Kilombo” is an Argentinean word that means chaotic. In Costa Rica it has come to be known because it’s the name of a great restaurant. As you approach, you are intrigued by the smell of grilling onions. 

You imagine the juicy cuts of beef that are being prepared for you. Each dish is plated perfectly. There are drops of chimichurri decorating the meat with a side of skewed potatoes and broccoli. 

Each week a special takes its place on the menu for just 7 days. This week it’s a dish called Lollipop, a tuna and entrails delight. The restaurant specializes in vacuum cooking. The sausage steak is a customer favorite.

The executive chef remembers his weekends growing up being filled with barbeque. He went on to study cooking in Lima and Spain. It was in Barcelona that he learned about vacuum cooking. 

The restaurant is on avenue 1, 100 meters east of the northeast corner of the Legislative Assembly.
